This Month’s Seafood Dish At: The Turtley Corn Mill


Here in Britain’s Ocean City, we are very fortunate to live so close to the sea, meaning that not only do we have access to an abundance of fresh, sustainable fish and shellfish, we also have plenty of chefs who know how they need to be cooked. Each month we will catch up with one of our restaurant members to find out what local seafood they have available on their current menu.

 This month we have been finding out where traditional, yet stylish, South Brent pub The Turtley Corn Mill have been sourcing some of their seafood from.

 
 

We discovered that their varied menu, full of seasonal and locally-produced dishes, featured freshly-caught haddock and megrim sourced from local 25m modern trawler boat The Crystal Sea.

 
 

Boat skipper, David Stevens, a director at Plymouth Fishing & Seafood Association has been fishing since he was 15 years old and his boat catches very high quality and sustainable fish out of the waters of Newlyn, Cornwall. To reduce its environmental impact, the Crystal Sea works a twin-rig net arrangement to increase efficiency and minimise fuel consumption. It can catch up to 30 different species of fish which are then sent up to Plymouth Trawler Agents for sale.

The team at the Turtley Corn Mill are passionate about supporting local business and comment: ‘We are always keen to offer our customers only locally sourced fish as much as possible. We have a very close and longstanding relationship with our fishmongers which allows to be on top of seasonal variations and day to day shortages (or indeed surpluses!). It is hugely important to us that we are able to talk to our customers about the provenance of all of our ingredients, but being able to pinpoint the exact vessel that landed the megrim on their plate is an incredible talking point with our customers and a real unique selling point for our menu. Operating a hospitality business in the South-West and so close to Plymouth fish market, we find that fish is a big part of our customers diets. They are increasingly aware of the importance of buying locally sourced and we must make sure that we not only give them this option, but that we also make sure they know that we are doing everything in our power to source locally ourselves.’
